Reactive oxygen species (ROS) and reactive nitrogen species (RNS) are various forms of activated oxygen and nitrogen that cause DNA damage that may lead to mutation 3. In fact, free radicals are believed to play important roles in different health conditions, including the aging process, cancer and atherosclerosis. Several anti-inflammatory, digestive, anti-necrotic, neuroprotective, and hepatoprotective drugs, have recently been shown to have an antioxidant and/or radical scavenging mechanism as part of their activity. Many studies have demonstrated the antioxidant activities and health benefits of the anthocyanins occurring in various fruits and vegetables. Anthocyanins are a group of naturally occurring phenolic compounds, which are responsible for the attractive colors of many flowers, fruits (particularly in berries), vegetables and related products derived from them. These polyphenolic substances are glycosides of poly hydroxy and poly methoxy-derivatives of 2-phenylbenzopyrylium or flavilium salts. Grapes and berries are the chief dietary sources of anthocyanins. Berries are rich in anthocyanins, compounds that provide pigmentation to fruits and serve as natural antioxidants. Earlier studies have shown that berry anthocyanins are beneficial in reducing age_associated oxidative stress. The aim of this study was evaluation of inhibitory effect of anthocyanins from three spicies of berries. In this study, anthocyanin pigments were extracted from berries with Cribago & Francis method. Nitric oxide radical inhibition assay of berries’ extracts have been done by the use of Griess Illosvoy reaction. The scavenging of nitric oxide by berries extract was increased in a dose-dependent manner.

Linum nodiflorum L. has high amount of omega 3 fatty acid. In this study seeds of 8 populations of Linum nodiflorum L., collected from different parts of Kermanshah, were cultivated in a farm at Agricultural and Natural Resources Research Center of West Azarbaijan. Three samples from each population were selected randomly. During and at the end of growing season phenological and 27 morphological characters such as length of main and secondary stems, numbers of capsules, distance of peduncles, length and diameter of root and and so on were measured. Data was analyzed using SPSS software. The results showed: Some characters had positive correlation. Distance of peduncles with diameter of secondary stems and length and width of capsules with length of root had positive significant correlation at 5% level of significance. There were two individual groups in accordance with measured characteristics. Bistoon sample had the longest period of growth with 3 months and 13 days and the longest period of reproduction was for Mahmud Abad sample with 1 month and 17 days.

In this study (Linum usitatissimum L.) grain samples that were collected from Khalkhal, Meshkin Shahr, Baft, Mashiz, Kerman and Urmia, were selected from Agricultural and Natural Resources Research Center of West Azarbaijan. Grains were grown in research farm of this center. Important characteristics of this oil and medical seed including: lenght of main and secondary stems, numbers of capsules, 1000 seeds weight, grain yield, oil content and etc, were selected and measured in three replications. Oil content was measured using Leiboritz method. The amounts of main five fatty acids namely; Palmitic, Stearic, Oleic, Linoleic and Linolenic acid were detected and measured by GC. Data were analysed by Excel and SPSS software. There were significant difference among some characteristics such as numbers of capsules and oil content at 1% level of significance. Oil content had positive significant correlation with 1000 seeds weight at 1% level of significance. This study indicated that Meshkin Shahr cultivar had the highest amounts of grain yield and oil content and therefore had the much amounts of omega 3 fatty acid. This sample was suitable for cultivation in North-western parts of our country.

Dragon's head (Lallemantia iberica F. & C. M.) an annual or perennial herb, or dwarf shrub that originates in the Caucasian region and was cultivated for ornament and may be domesticated in East and East Central Europe. Dragon head was cultivated for its seeds from which oil is extracted. The seed contains up to 30% of a drying oil. One of effective compounds in this plant is mucilage. Mucilage has different applications in the broad field of pharmacy and medicine now. Mucilage was extracted from dragon's head seed and was identified by using thin-layer chromatography. Method involves the following steps: first by extraction, purification, dialysis, lyophilization, deionization, hydrolyze and TLC analysis for choosing the best separation system, these separation systems were: 1- Silica gel G 60 HF plate using n- butanol: acid acetic: water (50:25:25 v/v) as mobile system. 2- Silica gel G 60 HF plate using chloroform: methanol (60:40 v/v) as solvent system. 3- Kieselguhr G plate using n- butanol: acetone: phosphoric acid (40:50:10 v/v) as mobile system. Finally, the best results achieved by using n-butanol: acetone: phosphoric acid (40:50:10 v/v) as mobile system on the Kieselguhr G plate as stationary phase. Lallemantia iberica mucilage was separated into seven spots. Mucilage of Lallemantia iberica seeds was composed of galacturonic acid, galactose, mannose, arabinose, xylose, glucose and rhamnose monosaccharide. This result is useful for more and better characterization of dragon's head mucilage for application in food industry.
